In November of 2010, Dean Simon founded Bruxie, Gourmet Waffle Sandwiches, an overnight success selling waffle sandwiches to lines down the block. Dean is the Chief Waffler and serial entrepreneur.

Brant Holland first met Dean in 1991 at Wolfgang Puck’s Spago where he worked for 14 years as a chef, general manager, corporate supervising chef, and F&B controller. On Maui, Brant has worked with Chefs Alan Wong, Jeff Scheer, and Taylor Ponte.
